Tony’s Lemon Bars
Ingredients:
Cookie Base: 1 cup unsalted butter, melted.
1/2 cup powdered sugar.
2 cups unbleached all purpose flower.
Lemon filling: 1 1/2 cups sugar
4 tablespoons unbleached all purpose flower.
1/2 teaspoon baking powder.
4 eggs
6 tablespoons fresh lemon juice.
fresh lemon rind -3 lemons.
Procedure:
Preheat oven to 350 degrees.
Mix together butter, powdered sugar, and flower until well blended.
Press mixture into the bottom of a 9x13 in glass baking dish.
Bake for 20 min.
Sift together sugar, flower, and baking powder into mixing bowl.
Add eggs, lemon juice and lemon rind.
Beat by hand or with electric mixer until well blended.
Pour mixture over crust and bake for 25 mins.
Allow bars to cool, then dust with powdered sugar and cut into squares.

Sara’s Thanksgiving Sweet Potato Puff
Ingredients:
2 cups mashed sweet potatoes/ yams.
2 Tbs. butter or margarine.
1 egg.
Salt and pepper to taste.
1/4 cup milk or cream.
Procedure:
Half of mashed sweet potatoes into greased casserole dish.
Layer with marshmallows
Add other with other half of sweet potatoes.
Layer with marshmallows again.
Heat in oven at 350 until top marshmallows are golden.
Latkes
Ingredients:
6 potatoes.
2 eggs.
1 large onion.
1/4 tsp baking powder - rounded.
1 Tsp. flour.
2 Tsp. matzo meal.
1 tsp salt.
Procedure:
Mix eggs and dry ingredients in large bowl.
Grate potatoes and onions; some potatoes, some onion, some potatoes, etc.
Spoon off as much excess liquid as possible and then mix with other ingredients after
Fry in oil, pressing down to keep them fairly thin.
Noodle Kugel
Ingredients:
1/2 lb cooked noodles, drained.
2 Tbs. chicken fat or butter.
1/2 cup sugar.
2 eggs.
1/2 cup raisins.
1/4 Tsp. salt
1/2 Tsp cinnamon - rounded.
Procedure:
Mix eggs and dry ingredients in large bowl.
Grate potatoes and onions; some potatoes, some onion, some potatoes, etc.
Spoon off as much excess liquid as possible and then mix with other ingredients after
Fry in oil, pressing down to keep them fairly thin.
